Dogliani DOCG Passola is a dry red wine made from our best Dolcetto grapes grown in Dogliani and harvested late.

It is precisely this characteristic that makes it unique: the result is a flavor that is intense and pleasant in aroma, with a slight hint of wood due to the 18-month aging in large barrels.

An experience to try, perhaps pairing it with strong-flavored dishes such as meat and game main courses, sliced meats, as well as medium-aged cheeses.

Specifications

The vineyard is grassed in alternate rows with green manure legumes until June.
Harvesting is by hand with bunch selection in late September when the grapes are perfectly ripe.
Vinification is achieved by a gentle destemming with a soft pressing of the berries.
Long temperature-controlled red fermentation.
Aged in steel tanks for 10 months, then in wooden barrels for 18 months and finally in bottles for 6 months.
