Apollonio is a dry red wine with an intense aroma and flavor, ideal for accompanying richly flavored dishes.
It is made from the vinification of a new grape variety recently introduced to the winery.
It appears ruby red with orange hues and has hints of ripe fruit with a slight woody note due to aging in barrel for 18 months.

Intense and pleasant in aroma with a slight hint of ripe fruit and wood due to the 18-month barrel aging.
The wine matures in wooden barrels before bottling and is suitable for long aging.
Local sliced meats, meat main courses, medium-aged but intense and richly flavored cheeses.

Where possible, the vineyard is grassed in alternate rows with green manure legumes until June.
Harvesting is done by hand in mid/late September when the grapes are perfectly ripe.
Vinification is achieved by a gentle destemming with a soft pressing of the berries.
Temperature-controlled red fermentation takes place with contact of the skins for at least 10 days.
Aged in steel tanks for 5 months and then 18 months in wooden barrels.
